Prepare for Birdnest soup

Since bird nests are from various countries of origin, species, expansion ratio and treatment effect,plus different grades, pricing and textures, customers can consider the above factors and pick suitable products according to one's own needs. There are different methods to serve bird nest. Stew the bird nest in advance and you can easily prepare different cuisine with it. There are only 3 simple steps:

1. Soak the bird nest thoroughly, rinse them clean
Fresh White Bird Nest: Soaking for around 2 hours.
Dry White Bird Nest: Soaking for around 3 hours.
Dry Red Bird Nest: Soaking for around 3 hours.

Tip: Many people would soak the bird nests overnight. When doing so, remember to shorten the time for stewing to prevent the bird´s nest from melting.

2. To stew bird nest, you need a stewing bowl and a pot that can place the entire stewing bowl (ceramic pot or stainless steel pot are fine). Place the soaked and cleaned bird nest into the stewing bowl, add suitable amount of water (about 75% of stewing bowl’s volume), cover well and place the entire stewing bowl into the boiling water pot (boiling water level reach half of the height of the stewing bowl).

Control the degree of heating
Bird nests should be stewed over water in low heat. This keeps the temperature around 80°C and prevents damaging proteins in the bird nest and reserve the aroma and nutrients.

Stew in low heat for 45 minutes.

3. When the bird nest cools down, store it in refrigerator. Freshly prepared stewed bird nest can be kept for 1 week at most.

Different ways of serving bird nest according to body’s nature.

Sweet foods are generally mild and good for nourishing the spleen. The body needs an adequate amount of sweets to regulate bodily functions. Bird nest is usually served sweetened.

Salt functions to remove heat from the body and detoxify the blood. The appropriate amount of sodium nourishes the kidneys.

If the bird nest is served sweet, add the rock sugar 10 minutes before stewing is completed. When served salty, add salt right before consumption. If you add salt when stewing starts, salt will disintegrate the bird´s nest, make it shrink and turn it crispy.
